The bottom section of your SuperBlog or InstaBlog contains the Copyright Information, Company Name, and other pertinent footer navigation. That is controlled in the Genesis > Simple Edits section of your WordPress blog. In this video, you'll learn how to find that section to make those edits.
UPDATE: As of 13-January-2022, the InstaBlog/SuperBlog has a simplified footer (compared to the video below) and links to your About Us, Contact Us, and Privacy Policy pages. You do NOT need to edit those links, but you should edit the URL in your copyright notice.
Go to Dashboard - Genesis - Simple Edits.
In the Footer Output, make sure the Modify Entire Footer Text stays checked. In the html code, you can simply make the html changes that you need to make in the Footer. Then click Save changes when you’re done.
